The Codex Alimentarius was created in 1962 by 2 UN organizations, the Food and Agricultural Organization and the World Health Organization. The Codex committee which is of interest to celiacs is the Codex Committee on Nutrition and Foods for Special Dietary Uses. Germany is the host government for this committee. It will be meeting in Bonn. You can access information on the past meeting at www.codexalimentarius.net/reports.asp .See Draft revised standards Gluten Free Foods. In general, areas covered under gluten and celiac are establishing accepted tests and standards of testing gluten and the level of gluten to be labeled gluten free. The issue of food starch manipulated to be gluten free is addressed.
