In response to the question posed by BJ about date of diagnosis and
reaction time to gluten:  I've been gluten-free for 7 years (biopsy
diagnosed) and my reaction time is at least 24-48 hours for gut rumbling and
loose bowels.  I can't remember ever having an immediate reaction, at
least nothing attributable to gluten.  It's an interesting theory about a
healed gut taking more time to show damage.  Doesn't it take awhile for
food to get into and through the intestine, anyway?
