A gelato bar opened recently in my small town
(Corvallis, Oregon) that makes (according to
second-hand reports) fabulously delicious gelato. I
assumed that, like most ice cream, gelato would be
gluten free. Wanting their product to be as authentic
as possible, the owners get the base mix from Italy,
and I read the label to be be sure it was GF. Imagine
my disappointment to see that wheat starch was listed
as an ingredient.
It's possible that the wheat starch in the mix meets
European standards for gluten, in which case it would
probably be OK. I wonder, however, if gelato found in
Italy would generally contain wheat starch? Has anyone
on the list checked that out?
