I recently joined a list called POFAK, which is short for Parents of Allergy
Kids. I was looking for a list geared toward adults, but found this instead
somehow. The onelist.com server has about a gazillion different lists. The
POFAK list also has a lot of useful files about food allergies,
substitutions, nutrition, recipes, links, etc. I found a few recipes for the
rice bread I've been searching for.

An elimination diet is a real pain in the neck, but well worth it. My wife
went through that a couple months ago.  The plus for me is that she stopped
eating gluten, so no more of the occasional reaction from gluten vapors
emanating from the kitchen.
