I recently contacted to managers of the Baja Fresh and
Guapos's Mexican restaurants in Maryland and DC,
Their replies are below. Baja Fresh was no help, so I
won't be eating there. As for Guapo's, the food is
delicious and the one time I ate there recently, I
didn't have a reaction. But as always, proceed with
caution and speak to the servers and chefs.

Hello Donna!

I am really sorry to hear about your illness.  I am so
happy to let you know that Guapo's can still be in
your list for Restaurants.  Any dish that contain corn
tortillas would be a good choice.  For example Crispy
Tacos, Enchiladas (made with Corn Tortillas), All our
cheff Recommendations (Salmon, Pollo Lupita, Mariscada
etc.) But definetely no Chimichangas, Burritos,
Quesadillas because they contain flour.
