The only places I know of (though there are many there!) are Olives at the Bellagio and the higher end place at Paris Paris hotel. Oh and that tall needle like building on the end of the strip does gf gourmet - very pricey though.

About a year and a half ago I had a great meal at a mexican restaurant in the back of the Mandalay Bay hotel. They were very celiac friendly - knew all the ingredients, everything was cooked there, chips fried in a dedicated fryer, great guacamole. I know that you can get sick of mexican20since it is often a safer alternative, but this was a great meal and they had an outdoor patio that was really nice.

P.F. Changs. (inside the Aladdin) was the winner hand's down. Almost every single res ponder suggested them - The lettuce wraps are great. So is the Chinese salad and lemon chicken) - lots of positive feedback on this one and their GF menu.

At Wynn which is very close to Paris there was Daniel Boulud Brasserie which overlooks the lake. Specify your gluten sensitivity when you make your reservation and you may end up with the same knowledgeable waiter.
The restaurant at the Paris (Mon Ami Gabi) to be incredibly understanding, answered all my questions and said that they tag your order with a bright20yellow piece of paper with your allergies/intolerances written on it so there are no mistakes made and the food was great
At Wild Bill's Buffalo Wings, the waitress showed me all the sauces that flavor the wings so I could see which were GF (there were some Definite surprises)
The chefs at the Hilton Hotel (buffet) were very familiar with gluten Issues and helpful.
Whole Foods, Wild Oats and Better Nutrition have a variety of GF products available, salad bars and even GF pizza at Wild Oats.

My hubby goes to Vegas often for business and stays at the Nugget often. Just recently, he took our 12 yr old son (who has Celiac) with him to Vegas. Our son had no reactions and enjoyed his stay. I'll list below the places they ate:
Golden Nugget buffet - my hubby talked with the servers at the buffet (not the waitresses, but the people serving at the buffet) and the chefs were very accommodating.
Vic & Anthony's (in the Nugget) - pricey steak house but very accommodating and willing to make GF items.
Grotto (Italian restaurant in the Nugget) - has NO GF offerings, so don't waste your time.
Carson Street Cafe (in the Nugget) - They alerted him not to eat the breakfast sausage and bacon - they cook it on bread to soak up the grease. However, they told him that they could prepare anything he would l
ike from the kitchen.
Triple George (Fremont St to 3rd Ave, on the left) - They have great steak, chicken and fish. Alert the server of your GF status and they will make what you wish.
I've traveled with my hubby several times, also and we've eaten at the following places without a reaction (I am Celiac as well):
Bellagio Hotel steakhouse, Prime - very, very pricey but worth it. The food is excellent and the view of the fountains are amazing.
Hard Rock Hotel, Simon - noisy but good food and very accommodating.
The Palms Hotel, N9NE - pricey but very tasty. Great place to celebrity watch (we saw Rande Gerber, Cindy Crawford and Kid Rock)
Mandalay Bay Hotel, Aureole - nice menu and good food. Amazing wine storage (servers hang from ropes to get to wine!)
Caesar's Palace Hotel, Bradley Ogden Las Vegas - again, pricey but very good food and accommodating.
