Below is a summary and some responses I received to my posting about
millet breads from DeLand Bakery in Florida.

Four people had questions about millet.

 1. Thought millet was a form of wheat.

 2. Millet is not GF is it?

 3. What is millet? Did not know, so did not buy it.

 4. Is millet safe?  Why not ask Don Kassarda?

NOTE: Don Kassarda is a frequent poster to this list. Maybe Don, or
another knowledgeable source, would reply to the list with an
explanation of millet.

For myself, I am very reactive to even a small amount of gluten, and
have been eating this bread for several months with no reaction. [But
did react to gluten a few weeks ago after ingesting a small amount in a
restaurant.]

I see our Florida secret is out.  Glad to hear someone from out of state has
also found them.  If you haven't tried them, the pizza rounds are wonderful.
They remind me of boboli but firmer.  I agree, the herb and veggie breads and
rolls are the best but the banana nut is yummy too.  Katy in S.W. Fla

Q. Are these rolls also lactose free?

A. According to the ingredient list, YES, they are. You may verify a
specific item with DeLand Bakery at 904-734-7553.

Q. Where is DeLand FL?

A. About 35 miles NE of Orlando, and 5 miles west of I-4 on SR-44. Or 20
miles SW of Daytona via I-4, on SR-44.
