if you want to put a coating on fried or baked foods, here's the way to do it:
1.  you do NOT have to use bread crumbs.  try using almond flour which is great or even rice flour or cornstarch or cornmeal

2. but here's the trick for a good crunchy coating..dip first in a flour and then into an beaten egg and then into the crumbs.  LET SIT IN FRIG FOR A HALF HOUR TO SET

Flavor crumbs and dusting flour with salt, pepper and herbs.
