This is my take on the story of the floating stools:

There are two causes of floating stools:

1. Steatorrhea - fat in the stools, in which the stools are pale and
malodorous, plus, there will be an oily film on the water in the toilet.
Steatorrhea is caused when the CD has damaged your villi enough so you are
not digesting fats so they go straight through and you are not absorbing
any fat soluble vitamins. This should go away once you learn to stay
completely GF and the gut has a chance to heal.

2. Trapped gas in the stool will also make it float. That just means you
probably got some gluten or dairy that is giving you gas and it permeates
the stool causing it to float. These look kind of loose as if they are
about to come apart, and sometimes do.
