Hi all,
I tried Buckwheat bread from Bette Hagman's book with my new Zojirishu
bread machine (by the way, I am very happy about the bread machine). The
result was truly fantastic. So far the best bread I have made, not only
in terms of  texture but also in terms of  taste too--and I think in
terms of its nutrious value as well. I used Arrowhead Mills's buckwheat
flour (although Hagman warns that the buckwheat sold in the market is
either mixed with wheat flour or there is a risk of contamination and
suggests that we mill our own buckwheat flour from kasha). But I called
the Arrowhead Mills and they confirmed that their bucwheat is pure (not
mixed with anyhting) and that they can guarantee that the flour is not
cross-contaminated (although in an article that was reprinted on this
LIST from the Gluten-Free Living, the Arrowhead Mills was not regarded
on the top of the list as far as the issue of cross-contamination was
concerned as they process the bucwheat on equipment that is not
dedicated to non-gluten-containing products. But the spokeswoman told
the person who wrote the article that the equipment is cleaned between
runs and the first 40-50 pounds processed on the cleaned equipment and
given to charity).

Unfortunately after eating this great tasting bread I had a small
symptom in the stomach and didn't have the courage to continue. I just
wanted to ask whether anyone has tried Arrowhead buckwheat flour and
what their experience was.
