Our 9 year old celiac daughter, Emily, is starting work on a science project
that is due about 12 months from now.  She is in fourth grade.  The project
is due in fifth grade.

She is interested in doing something to help all of us better understand
celiac disease and its impact.  We have fairly good access to science labs.
The lab access, combined with my long ago bachelor's degree in biology, gives
us the resources to attempt something relatively sophisticated.

What we need is ideas.

She needs to start with a hypothesis and prove or disprove it.

Any suggestions?
