Does anybody know the reasons for the low vitamin and mineral content of
various GF cereals and crackers?  For example, comparing  a box of glutinous
corn flakes to a GF product, we noted that there is a significant paucity of
all vitamin content in the GF product, compared to the glutinous product. Both
of these cereals are popular brands.  (i.e., GF cereal has 0% vitamin A and 0%
vitamin C;  the glutinous cereal has 15% vitamin A and 25% vitamin C;   the
glutinous cereal also has relatively substantial amounts of Vitamin D,  B
vitamins, etc.)

We are not criticizing the companies that produce GF cereals;  we are
wondering why they cannot fortify the GF cereals?  We noticed that the WASA GF
cracker has 0% for vitamins A & C.  This, too, puzzles us.
