Up until about 18 months ago, I was a heavy consumer of a baked rice cracker
from a company with a name like Pacific Grain or Pacific Rice.  The crackers
were about 2 inches square, a quarter inch thick, and primarily made of rice.
Unlike several other types of crackers, these weren't salty.  They were also
available either plain or with different toppings (cheese flavor, apple /
cinnamin, etc)
 
These disappeared from store shelves when the company stopped making them.  In
my opinion, they were much better than rice cakes (and easier than baking bread
all the time) for sandwiches, snacks, etc.
 
Do any of you have another source for this type of cracker?  or, does anyone
know how to make them at home?
