Here's a new breakfast idea I stumbled upon kinda by accident. Perhaps you
might like it, too, if you also get Ener-G Tapioca Bread and end up with a
lot of crusts that fall off. (I like that bread, except for that.)

Anyway, as I got down to the end of the loaf, I had a bread bag full of
crusts. In the past, I've dried them and used them for bread crumbs. This
weekend, however, I tried something different.

I was going to make french toast out the intact pieces of bread, but
instead, in a moment of inspiration, put the egg/milk mixture in the food
processor with the crusts, and blended them up. It made a terrific pancake
(actually, two 6-7 inch pancakes). Hearty and with great texture. Much
nicer than the french toast and easier to make than regular pancakes. I
think I'll do it in future when in the mood for pancakes even if the bread
isn't crumbled, because it's so good and quick and easy!

So, there's a different breakfast idea. It seems like it should work with
any bread as well- but I can't speak to that. Enjoy!

Mary T.
