Ener-G Foods in Seattle makes a good Tapioca bread.  You can reach them at
http://www.ener-g.comThe bread comes packed in separate bags and holds up well
without refrigeration.  I generally buy it 4 cases at a time and rarely lose any
of the loaves to spoilage.  (Ener-G will replace spoiled bread if you contact
their customer support number.)
