Thanks to all who answered the question I listed below:

"My husband, who was diagnosed one year ago and has been gluten free since
then, wanted to find out what his symptoms would be if he ingested gluten.

He tested himself on a 6-inch piece of french bread.  It's been 2 days and
he's had no problems.  Is that common?  Has it happened to any of you?  I'll
summarize."

First of all I want to assure everyone who was concerned that it is not my
husband's intent to try to go off the diet.  After one year he is very
comfortable eating gluten free.  It has not been a major problem for him.  We
even spent two weeks in Italy with no problems.  The only two things he
misses is good bread and good beer.  The intent of the 'test' was to
determine what if any reaction he has to gluten, in case he accidentally
ingests some.  Here are your responses.  If anyone is interested, I have all
the individual comments.

Number of responses = 25
No reactions or symptoms = 12
Delayed reaction = 4
Immediate = 3

The remaining six had comments or concerns about my husband going off the
diet, but didn't say what if any reactions they had.
