Thanks for all the ideas.  The first place anyone should look is the
wonderful summary that Jeff Golden has on file from May 97.  Get it
through the WWW site directly or request :  GET CELIAC TMPFILE4 from
LISTSERV.  I suggest a search of the site, there are a few other good
suggestions in the archives.

I do have a few things to add that came up and personal comments.

1.  Instant potatoes.  Most have mono- and di- glycerides that may cause
problems.  I found Bob's Red Mill potato flakes are just that, nothing
else.

2. Tamarind Foods (www.tamtree.com) has Indian food in a pack, shelf
stable and quick cooking, gluten free and vegan.  Worth a look, price
even reasonable.

3.  Jerky - look carefully at the labels.  There is a wide variety of
stuff added to them.  Depending on what else you might be sensitive too,
you may have to make your own.

4.  Instant powdered milk replacer.  I would have to take Darifree or
MooMilk, a soy free version.

Jeff Golden's summary is thorough, touching on many points of
packability, odor, convenience, bulk, etc.  Other places to look would
be under the emergency file.
