PEANUT BUTTER COOKIES

since the orignal recipe was posted around Christmas time, I have been
making these cookies time and and time again.  As I mentioned before, I am
in charge of our church's coffee hour and prepare goodies for about a
hundred and fifty people each week.  These cookies are a favorite....of
everyone.


The basic recipe is


1 cup peanut butter
1 cup sugar
1egg
1 teas vanilla.

thant's it.....however, here is what I have discovered

1. a 40 oz jar of extra chrunchy pb is 5 cups.

2. each cup of pb makes one cookie tray of cookies

3.  use brown sugar.

4. After mixing all ingredients, place batter in flat pan and place in
FREEZER FOR ROUGHLY A HALF HOUR OR UNTIL FIRM.

5. scoop batter by spoonsful onto ungreased cookie sheet.  I do all at
once and place cookie sheet waiting to be baked in refr to keep cool.

6. Bake at 350 for 12 to 15 mind [depending on sixze] until edges START
TO BROWN and entire cookie is golden.

7. let rest on pan for a minute before removing to a rack for final
cooling.

The above produces a neat, delicous cookie.  Previously, the batter
would turn oily and burn.  These do not.
