I'm wondering if anyone has a recipe for fruit cake that is made with dried
fruit (peaches/apricots/apples/etc) rather than the sugary candied type of
fruit .

The type of fruit cake I'm looking for is not sweet and sugary but more of
a health food type of fruit cake.  It doesn't matter if it is a non-GF
recipe as I will experiment and convert it to GF.
