The _Merck Manual_, a respected American medical handbook, recommends a
multivitamin supplement and certain other dietary supplements for celiac
patients with evidence of malabsorption.  Depending on the extent of the
intestinal damage there could be a shortage of several different nutrients,
so I would not focus just on Vitamin C.    : )
