I got a few recipes and I did wind up finding frozen ones in a health food
store by our house.  I found they had stuffed shells too.  Can't wait to
see if my 3 year old eats them

Here are the responses I got:

This is my recipe for the dough...just fill with the
ricotta/mozzarella/egg
mixture for cheese lasagna from any cook book.

2 cups Bette Hagmans four flour mix
4 tsp zanthum gum
1/2 tsp salt
1 tbsp softenend butter
1 tbsp olive oil
4 eggs
cornstarch on hand for kneadind and getting a non-sticky dough

beat the eggs till frothy with a fork
add olive oil

mix in dry ingredients
stir to form a dough ball
add butter
knead on a surface dusted with cornstarch

when the dough has a smooth texture slice one inch pieces...roll out with
rolling pin...slice into strips and run through a hand pasta machine..if
you
don't have one i would invest ...you can use a round cookie cutter to cut
dough...put together crimping edges and boil till al-dente

We use Betty Hagman's Homemade Pasta recipe in The Gluten-Free Gourmet
cookbook (the original). The ingredients are: 1/3 cup tapioca flour, 2
tablespoons potato starch flour, 1/3 cup cornstarch, 1/2 teaspoon salt, 1
tablespoon xanthan gum, 2 large eggs, 1 tablespoon vegetable oil. Combine
flours, cornstarch, salt, and xanthan gum. Beat eggs lightly and add oil.
Pour egg into flour mixture and stir. This will feel much like pastry
dough.
Work together into a firm ball. Knead a minute or two. Then she calls for
rolling it out on a bread board, but we use a pasta maker attachment for
the
KitchenAid mixer.

Bette Hagman has a recipe, i have made it , it is excellent,
but....difficult and time consuming, but so worth it!! don't freeze them
ontop of each other....i have done that and recked it!! don't do that !!,
eat them all!!

If you are any where near Matawan, NJ there is a health food store that
carries gf ravioli. I never tried them myself but here is information on
the
ravioli and the store that carries them. This info was send to the group
leader then circulated to the group members:

I wanted to let you know that Linda's Diet Delites in Matawan, NJ is now
carrying both frozen and dry grocery gluten-free products from Dietary
Specialties. The white cake mix and cheese ravioli (frozen) keep flying off
the shelves. These are just two of the items we carry.

In particular, I wanted to let you know that we regularly stock Dietary
Specialties' chicken nuggets. I was informed by one of my distributors that
Wellshire Farms nuggets will not be available for another 3-4 months, as
the
manufacturer they used to produce them went out of business, and they're
still looking for another place to produce the chicken nuggets.

If you think it is appropriate, please pass this information along to your
support group e-mail list. If people are looking for particular products
and
want to know if they are in stock at Linda's Diet Delites of Matawan before
they take the trip, they can call us at 732-566-1400. If a particular item
is not in stock, I can have it within a few days and call the interested
party to let them know when it has arrived at our store. We regularly set
aside products for people until they can get in to pick them up.

I use the bread mix for just about everything. If you just take any pre
packaged bread mix and add water and egg to it....to the consistency of
dough, roll it out and stuff it, she should have a fun meal. Unfortunately
sometimes the ravioli might fall apart as your boil them, but they are
still good
