Hi there-

Thank you to everyone who responded to my question about how long it
takes to have a reaction after accidentally ingesting gluten.  I got a lot 
of
replies and everyone was very supportive.  I also got some requests
from people who were interested in seeing the summary, so here goes.
As I suspected, the answers varied considerably and so in this summary
I followed Gene's lead and grouped them together as much as possible.

Almost immediately
to 30 minutes-  4 people
1 hour-                         4 people

Many people also cautioned not to always assume that it is a gluten
reaction that is causing the problem.  They noted that they also have
GI reactions to:

Soy, Lactose, Processed foods and hydrolyzed vegetable protein,
Eggs, Corn, Nuts, Raw veggies, Rich foods, Fibrous foods, Fat,
Spoiled foods, Stress, Illness, and Allergies.

I also received suggestions to keep a food diary.  This is actually
what sparked the question in the first place.  I was keeping a food
diary and I would refer to it when I had a reaction and get frustrated
when I didn't see the problem and didn't know how far back to
focus on.  A few people pointed out that sometimes we never find
out what it was and I guess I will just have to learn to accept that
occasionally.

Someone suggested that sometimes cross contamination is the
problem and that it helps to have separate dish rags and dish
towels- good idea and one I will implement.

Another suggested "Sometimes it helps to eat something that isn't
well digested (corn, carrots) and track how long it normally takes
the 'flags' to work their way through. It's starting looking at about
that time frame.  Those with a tendency for diarrhea will have a
short time. For those leaning more toward constipation, it might even
decrease motility & take longer."  (which is a good idea and makes
a lot of sense- I hadn't thought of this)

And for the person that said she had the same question and was also
wondering how long the gluten reaction lasted- many people included
that in their answer and it varied from a few hours to a few days.  At
least three people said that they feel the repercussions for several
weeks afterward.

Sorry this summary was so long, but I got a lot of responses, which I
