Thank you for the many responses for my question on Urid flour. Well I
am pleased to report back to you all that it is indeed gluten free -made
by lentils usually, so pappadums are safe to eat, microwaved they make a
tasty low fat crisp. Another way to utilise them is to soak pappadums in
cold water for about 5-10 minutes then they become soft and flexible and
can be used as dim sim or a pakora pastry that can be filled, pinch
sealed and then deep fried!
