Chestnut Flour Crepes with Ricotta Cheese & Grand Marnier

For crepes
2 cups chestnut flour
1 cup milk
1 cup water
1 egg
1 tablespoon melted butter, plus more for greasing pan
¼ teaspoon salt

For ricotta filling
1 ½ cups fresh sheep's (or cow's) milk ricotta
Zest of 1 orange
3 tablespoons bittersweet or semisweet chocolate shavings
1 teaspoon Grand Marnier
Confectioner's sugar


1. Whisk together chestnut flour, milk, water, egg, melted butter, and salt
in a medium bowl. Strain batter through a sieve and let it rest for 30
minutes.
2. While batter is resting, make ricotta filling. Combine ricotta, orange
zest, chocolate shavings, and Grand Marnier in a medium bowl and refrigerate
until ready to assemble crepes.
3. To make crepes, heat medium sized, heavy skillet over high heat. Brush
skillet with softened butter in a very thin layer. Tilt pan toward you and
pour 1/3 cup of batter into upper quadrant of skillet. Swirl batter in pan
by rotating pan back and forth until it completely covers pan.
4. Cook crepe until surface is dry and underside is golden. Flip crepe and
cook other side until golden. Repeat with remaining batter.
5. Lay crepe on a plate and place 2 tablespoons of ricotta filling in center
and roll or fold into a triangular shape. Dust with confectioner's sugar and
serve.
