I posted a couple weeks ago about a very disheartening phone call with
someone from the corporate office of Fridays and how dismayed I was to
find out how unaware they are about Celiac disease.  After continuing to
search out someone in upper management of the Carlson corporation, I got
a hold of the district manager for the Midwestern area.

He was appalled by the way I was treated and offered to research Celiac
and work with their R & D dpmt and the manager of the restaurant to have
a "pseudo" birthday party for my daughter.  His goal is to show us that
they CAN accommodate Celiac and to create an awareness within the entire
corporate environment of Carlson's.

This week they have researched the disease, researched other restaurants
that have gluten-free menus and gone thru their menu to see what they
can adjust to provide gluten-free.  Yesterday they emailed me a very
large list of options for my daughter to eat at her "birthday party",
which is tomorrow.

They are now aware of cross contamination and are dedicating fryers for
the french fries and anything else that may require frying and cooking
anything else for her on a separate grill.

I wanted to advise everyone that they are trying.  They do not want to
lose the celiac community's business.  I will post after we eat there
and let you all know how they did, and most importantly, if my daughter
had any problems post eating there.

Let's hope that this negative experience will actually end up adding
another restaurant to the list of ones that actually provide GF menus.
