I answered my own question by searching the net further. It turns out
biodegradable shipping peanuts are usually made from potato and/or wheat
starch! 

It's another thing we all have to look out for it seems. Be really careful
when opening packages since you never know what a company might use. They
are often light green colored but can be any color or white. They are
usually pellet shaped (they remind me of a big cheese doodle). 

And to think that in my effort to help the environment, I was probably
making myself sick. Live and learn! I hope this helps someone. I've been GF
for 2 1/2 years and this thought never occurred to me.
