celiac symptoms are often triggered by physical or emotional
stress.

the B vitamin thing may well be arising from malabsorption and
related problems; beware of pernicious anemia and try to eat as
well as you can to minimize supplements.
beware of nutraceuticals, supplements and so forth; they are not
for you until you understand your situation better.  if you are taking
any, stop now, the ingredients are generally inappropriate.
If you want a supplement, which isn't clear, you might want to look
at TwinLab Allergy Multi Caps (for Allergic & Chemically
Hypersensitive individuals).  it is a multi-vitamin, multi-mineral in
a large capsule, and I think as 'clean' as they get.

Keep a food and symptom log, identify what is absolutely safe, then
try expanding your foods one item at a time per week.
Based on my wife's experience (celiac) the diet tends to shrink and
expand based on how many food mistakes are made.

a few things come to mind:
1) are you eating organic foods?  You may be reacting to pesticides etal
instead of the food itself.  We found this to be true with my daughter
who was reacting to the antibiotics in the feed given chickens.  Was
fine on organic
2. do fish bother you? Deep, cold water fish are generally considered
to be the safest.
3.  Have you started working on fixing leaky gut associated with
celiac?

It is very simple
WITH EACH MEAL TAKE ONE CAPSULE L-GLUTAMINE AND AN ACIDOPHILUS CAPSULE

My mom had an experience similar to yours. After starting the gf diet
she got better at first, but then got worse and had an ever
smaller and smaller list of foods she could tolerate. Finally, and
luckily, She was treated for an assumed infection in the small
intestine.
Apparently it is hard to test for this, but easy to treat it with
antibiotics.


I avoid ALL processed foods now and have for over a year and am doing
fine. A gf diet helped but until I quit eating all processed foods I
still had problems.  Carrots and potatoes are high in starch and turn
to sugar quickly in the body.  Could be that's why you don't tolerate
them well.  B-12 only comes from meat, dairy and eggs.  Since you
don't eat those foods your body would not be getting any B-12.  I eat
a lot of meat but know that some people can not tolerate grain fed
meat.  They hunt themselves or buy meat that has not been grain feed.
