I am happy to say that I have received several very positive reports
from people who have had GF pizza at different Pizzeria Uno restaurants
in different states. I have summarized the responses below. 

I live in Ma. and have had the pizza 6 or 7 times at 2 different
locations and have never had a problem. It could be that its just new to
that location and new to the cooks and they need time to get it right.

this is totally unlike the ones we've had at UNO.  Ours have been GREAT.
thin and very crispy

as a pizza lover in general and 6 weeks since Celiac diagnosis, I have
been experimenting with a variety of GF pizza options.  I had the new GF
pizza at Uno a week ago the day they got it in for the first time at the
Downingtown restaurant and thought it was not too bad, but certainly not
wonderful.  Keep in mind that the taste can vary so widely depending on
the other ingredients and the precise timing and temp of the oven and
how the cook handled it.  Put it this way, the GF pizza at Uno in my
opinion was not really any worse than any other regular pizzas they
carry since I was not a huge Uno Pizza fan although I love pizza and I
am a regular customer of Uno. My crust never fell apart and it had no
funky taste like others I have tried so your experience may not be
typical.  I have other far better options for pizza and as a regular
customer of Uno, I will not go there for the pizza.

I had some last weekend at the Uno's on Rt.100 just above Exton, PA and
it was delicious!  The texture and taste were like I remembered about
pizza from my pre-days.  They said they have had gluten-free pizza for a
long time, so maybe experience will help your local restaurant.

Thank you for the feedback on the GF pizza.  I too was excited for my
husband and was going to plan a trip to the mall 25 min. away to have
him try it.  Won't rush out to do that now.  

I visited my son in Boston this past November - the gf pizza at Pizzeria
Uno was so good, I ordered a couple to take home and freeze - and they
were just as good taken from the freezer and warmed up.  Perhaps the
restaurant in Dover doesn't have it right yet, but I wouldn't hesitate
to order again.

I am with you. I went to Uno in Virginia Beach tonight. I was very
disappointed in the non-selection (cheese or pepperoni) for pizza. After
reading your email I understand that the crust would not hold up to any
other toppings. I ordered a steak; it was good, not great, not even very
good, a bit bland. The mashed potatoes were yummy - I sure hope they
really were GF. I will not go back.

I ate at UNO today in Fredericksburg, VA and was very pleased with the
GF pizza. I could pick up each piece with my hands. It was crispy and
flaky. I just sent in a post to the listserv about it (as I'd planned to
before I read your message). Do give your UNO feedback. Our local one
definitely wanted feedback. They are already planning on adding
Redbridge beer to the menu so that GF patrons can have that with their
pizza if they like. I do agree that it is still different from
gluten-containing pizza, but again I enjoyed it. Perhaps yours wasn't
cooked at the proper temperature and/or the toppings weren't the right
amount and affected the dough.

I had one Saturday, and it was wonderful, two of my children are GF, and
they enjoyed it as well. I would be a little patient this is new for
them too, they are trying, talk with the manager, ours stopped by and
asked our opinion to double check
