once again, the "list musketeers" to the rescue.  i recieved many copies of
the one i was looking for and a couple other ones.  the one i've tried that
was sooooooo good is first, the rest follow.  bon apetit everyone!  and
thanks!

Apple Cake (this was it!)

Beat 1 3/4 cups sugar with 3 eggs.  Add 1 cup oil and mix until creamy.

Sift together:

2 cups GF flour
1 teaspoon cinnamon    1 teaspoon baking soda
1 teaspoon salt        1 teaspoon xanthan gum

Mix flour mixture with egg mixture;  add 1 teaspoon vanilla.

Fold in:

2 cups sliced apples
1 cup chopped nuts

Turn into a well-greased (I use Pam) 13x9 pan.  Bake at 375 degrees for 45 to
50 minutes.

This is a delicious recipe without having to use frosting.  My CDE
(certified dessert expert) non-celiac husband thought this was outstanding!

1  cup  wesson oil
3 eggs
1 tsp. salt
1 tsp .baking powder
1 tsp. baking soda
1/2  tsp. cinnamon
1 tsp. gf vanilla
2 tsp. xanthan gum
3 cups fresh chopped apples
2 cups sugar
2 1/2  cups gf flour mix (Bette Hagman)
1 cup pecan nuts (optional)

Mix ingredients well and fold in apples & nuts.

Bake in a 9x13 pan at 350,  40-60 minutes.

Your wish is my command.  My mother started making this cake back in the
sixties.  It was based on a James Beard recipe.  I've made it gf.   It
is soooooo good.  When you make it, thank Stella--she was well know for
her baking and this was a crowing achievement.

Stella's Apple cake

4 eggs
1 cup veg oil
2 cups sugar
2 cups corn starch
2 teas cinnamon
1/2 teas freshly grated nutmeg
pinch cloves
1 teas salt
4 cups chopped apples [I  use Mutsu, but you can use any apple that
holds together when baked]
1 cup chopped walnuts
1 cup raisins, soaked [opt]
2 teas vanilla

Beat eggs and sugar in a heavy duty mixer until light.  Gradually add
oil and beat well.

Add dry ingredients and combine well

Beat in vanilla

Fold in apples, nuts, and raisins if desired  Batter will be very thick

Pour into a bundt pan that has been coated with crisco

Bake at 350 until tests done [start checking after 45 min]

Let rest in pan ten min.  Turn out onto serving plate and cover with glaze

Glaze:

In a heavy pan melt 2 tablespoons butter.  Add 2 T white sugar and 2 T
brown sugar [or 4T white sugar].  Cook over low heat until thick, bubbly
and caramel colored.  Add 2 T heavy cream and 2 teas vanilla.  Stir
while cooking about 1 min.  Spoon over sides and top of cake.  Let  cool
thoroughly before serving.

asude:  I'm going to try making this with almond flour.  I think it
would be even more delicious.

Apple Coffee Cake

Can leave the coffee & nuts off this one if you wish

3 Small Granny Smith Apples Sliced thinly
3 Tablespoons of Brown Sugar
1 tablespoon of lemon juice  (or water)
1 teaspoon cinnamon
1tablespoon instant coffee

Combine these four ingriedents and bring to boil and simmer gently for five
minutes.  allow to cool

Pre heat oven to 180deg

1/3 cup Soy Flour
!/3 cup Corn flour
1/3 cup Rice Flour
1/2 teaspoon bi Carb soda
1 teaspoon baking powder(make sure Gluten free)
pinch salt

Combine these and sift together

1/3 cup of sugar
2 tablespoons butter
1 large egg
1 teaspoon Vanilla Extract(gluten and alcohol free)

Beat these together until creamy, add flour and 1/2 cup of milk and beat
thoughly until smooth Pour the cake mix into a greased cake pan, spoon the
apple mix evenly over the top and sprinkle with crushed nuts,  Bake for
abot 30 minutes or until cooked.

Cool five minutes in pan before turning out onto a rack, when you remove
from oven pour this glaze over it immediately,  it is best to cool at least
5 minutes in the pan so it doesn't fall apart.

1/4 cup brown sugar
1 teaspoon milk
1 teaspoon cinnamon
bring to boil and simmer till like a sryup keep warm
I serve this with whipped cream
