As far as Celiac being a disability - the jury's still out!  I got differing
answers and one wonderfully vague (and self admitted) answer from a lawyer
(thanks for poking fun at yourself!).  Basically it is case dependent on
whether or not it is a disability.  Obviously I am biased but if you actually
look at the text of the ADA - I think we are.  I also found a good website:

THis is ADA info not celiac - but I think that it shoudl cover us - but I am
not a lawyer.
