Dear Gluten-Free Bakers,

Hello and Happy May!

Spring is finally here! Your spring cleaning routine might include adding
new recipes and equipment to your gluten-free kitchen. We are here to help!
This month Gluten-Free Baking and More has great recipes for Mother's Day
and More. Plus, if you are thinking about getting Mom a KitchenAid for
Mother's Day, our article will help you select just the right model.

Gluten-Free Baking and More is a reader supported monthly newsletter devoted
to gluten-free baking and cooking. To subscribe, visit
www.glutenfreebaking.com The newsletter for Celiacs who love to bake!

This month our recipes include:
Cranberry Yogurt Bread--This light, moist bread is perfect for breakfast
with a cup of tea or coffee. In addition to making a great loaf of bread,
this recipe produces perfect mini-muffins or mini-bundt cake. Make a double
batch and freeze some for later!

Rosettes--My Aunt Rita inspired this recipe. Honestly, she has been nagging
me for a rosette recipe for a long time! My gluten-free version of her
recipe makes rosettes just as light and crunchy as the wheat-filled
original. Make a big plate of these for Mother's Day, dust with powdered
sugar and watch as they quickly disappear! Yum!

Peanut Butter Chocolate Chip Cookies--Milk chocolate chips embedded in moist
peanut butter cookies. These cookies are so quick and easy to make, I am
sure they will soon become a family favorite. This is a *must* try recipe
for anyone who loves peanut butter!

Asparagus Rice Salad--Say hello to spring with a refreshing rice salad. This
salad combines asparagus and cucumbers, creating a light and tasty side dish
for a spring meal.

Cornmeal Cake with Very Berry Compote--This is not cornbread! Rather, this
is a dense and delicious bundt cake. Served with a warm very berry compote,
I like to enjoy a slice of this cake after a light meal.

In addition, our series "Do you need a..." continues with a look at
KitchenAid mixers. We tell you what models we love and what models with
don't. (We know our KitchenAid mixers! We have five of them in the test
kitchen.)

Plus, practical baking and cooking hints and a recipe for quick chicken with
rice soup.
