Re: being Jewish. I am and was diagnosed as an infant in 1946, "outgrew" it
and was rediagnosed in 1989. I now lead a relatively gluten free life and
feel much better, but am 15 lbs. heavier (some of which I would like to
lose!).

In any case, there are many Jewish celiacs. I have a great recipe for
"unmatzoh balls" which I got from Beth Hillson from the Gluten Free Pantry in
Connecticut. It works well at Passover, and I no longer have to feel deprived
when everyone is eating what used to be one of my favorite things. I have
adapted other "Jewish" recipes along the way, substituting potato flour in
kugel, using gluten free pasta (Pastariso) for noodle pudding, etc.
