I was watching "Everyday Italian" on the Food Chn today & Giada made crepes without any flour ....... just eggs, milk, salt & pepper. Then filled them with cheese, rolled them up & baked them in a pan with marinara sauce.
 
Has anyone made crepes - with or without flour?
 
Any tips or ideas?
