Thanks, Gayle, for all the information from folks about quinoa, teff, etc.
Related to the whole quinoa, teff, etc. confusion (at least in my mind) -
what about wheat starch? My understanding is that wheat starch is
considered safe by European celiac groups, but not be American groups.
Additionally, the Mayo Clinic considers it safe and supposedly even sells
it (second-hand from my nutritionist friend who used to counsel newly
diagnosed celiacs at Mayo).
