Sometime ago in the body of a message there was a bit of information that I
found startling, but have not seen any reaction to it on this list. The
writer indicated that white rice is sometimes (often?) enriched by soaking
in a barley solution. Is this a common practice? If so, is it a risk for
celiacs? I generally cook only brown rice but I do use rice flour from
Energ Foods for baking and also buy a few mixes from other gf sources. It
seems an important issue for us and I would like to see some further
information on the topic if any of you have some.
