Someone wrote a couple of weeks back:

Yes, pudding is quite a simple thing to make. It is one of my
family's favorite desserts.

Here is my recipe, if you want to see for yourself:

1/3-1/2 c. sugar
3 TBSP corn flour
1/4 tsp. salt
2 1/2 c. milk
(If you want chocolate pudding, add 2 1/2 TBSP cocoa powder)

Mix 1st 3 ingredients (+ cocoa powder, if you want chocolate) well in
sauce pan. Add the milk. Boil until it starts to thicken. When just
boiling, transfer pot to low flame for 3 minutes. Keep stirring.
Remove from heat and add 1 1/2 tsp. GF vanilla extract. Let it cool.

I usually make one recipe of vanilla and one of chocolate and then
layer them in clear dessert glasses after the flavors have cooled.
Then I top with whipped cream and decorate with chocolate chips or
sprinkles. Makes 5 or 6 good-sized portions.

If you're counting calories, this is not for you.
