The kinetics of celiac disease is as follows:
        1. Clinical symtoms appear first,
        2. Then antibodies,
        3. Then villi damage.

In the healing process, the antibodies have to drop before the villi can
begin to repair and the antibody drop can take from weeks, months to a
year.  Since the villi damage is in response to the presence of
antibodies, they cannot really begin to 'straighten up' right away.
Villi can repair/regenerate themselves within a week -- absent anything
that will tear them down.

I am not a doctor, only a voracious reader.  This is not medical advice,
but it is drawn from my readings and discussions with medical/scientific
people.
