Thanks so much to all who responded. Having just joined the list, my heart
was touched by your support. Guess we all need to hang in there! A short
summary of your information follows:

The flours that we use are higher
in carbs/calories than other flours.

GF foods are higher in calories and
fat due to the eggs, cheeses and
other binders we use.

Other food allergies may be causing
weight gain or water retention.

Strong bones are heavier!

It's a trade-off: gaining weight
but ultimately feeling better and
being healthier.

Since many of us are always hungry,
we're eating more.

In order to lose weight, we have
to expend more calories than we
ingest.....

Medications, esp HRT and those
for osteoporosis have weight
gain as side effects.

Weight gain is initially common,
and usually tapers off. Our bodies
are adjusting to finally being able
to absorb food. Also, our bodies
are storing up food now because
of the starvation syndrome many
of us experienced before going GF.

Corn/rice metabolize differently.

We eat more starches and sugars.
