I believe I had read at one time that there was a formula for use   of 
xanthan gum    If you used x amount of xanthan gum to x amount of gluten free cup of 
flour.   Now for the life of me, I cannot remember.   anyone remember, 
please.
I have started to use coconut flour.   Tastes yummy, but crumbles.
