The holidays are in full swing and what better treat than an old fashioned
home baked pie. Need a Gluten-free Pie crust that is so delicious they will
never know it's gluten-free?

Here are some ideas, with a Happy Holidays from Pamela's Products! And,
don't forget about Pamela's full range of Quick, Easy & Delicious baking
mixes. As well as our signature decadent cookies in Traditional and Organic

(Simple) Pie &/or Cheesecake Crust

Place approximately 12 home baked cookies or a complete box of Pamela's
Cookies (9 cookies total) in a plastic bag. Use a rolling pin to make cookie
crumbs. You will need 2 cups of crumbs. Melt 4 table spoons butter. Coat the
cookies crumbs with the butter. Pat into lightly greased pie pan. Bake as
directed.
When using with a non-bake filling, pre-bake pie crust in preheated 350º
oven for 10 minutes, then add filling.
Wonderful for chocolate pudding pie or for an ice cream pie (soften ice
cream, make pie, then refreeze).

Pamela's Pie Crust #1
1-1/2 cups Pamela's Baking & Pancake Mix
2 teaspoons sugar
4 tablespoons unsalted butter
1/8 cup oil
1/3 cup ice water

Combine Pamela's Baking & Pancake Mix and sugar in a bowl. Cut butter
through flour mixture with two knives, until butter is in small peas sized
pieces. Add oil, then slowly add ice water until dough comes together, not
sticky. You may not need all of the water.

Roll out the dough between two sheets of parchment or wax paper. Dough
should be thin, about 1/8". Peel the top paper off the dough and invert into
a pie dish. Peel off the second sheet of paper, arrange the dough, and fix
the crust edge. Poke the crust with a fork, on the bottom and sides to help
prevent puffing.Or instead of rolling out the dough, press it into a pan
with your fingers, the thinner the better. Poke the crust with a fork, on
the bottom and sides to help prevent puffing.

Bake unfilled in a 350º oven for 10 to 15 minutes. Watch closely, done when
golden brown. If it puffs during baking, poke with a fork. Or, bake filled
with your favorite filling by following the baking instructions on your
recipe. Try baking the empty crust for an initial five minutes prior to
filling to ensure that the bottom bakes evenly. Then fill and bake.

Recipe makes one 9" pie crust.

Helpful Hint: Covering the edges with foil will help to prevent your crust
from burning. Also, try baking the pie on the lower racks of the oven, this
allows the bottom of crust to bake more thoroughly.
