Some of the most expensive soy sauces are made without
wheat, so look around.  Those marketed by "Meridian" in the
UK are *marked* GF if they are GF.

While Coleman's "English Mustard" IS blended with wheat
flour, quite a  number of their mustards are not.  They
seem to be fairly good in the UK about declaring properly
on their products but I can't answer for what they may do
in other countries.

NB this information is sent by a "foodie" with no contact
with either company except as a purchaser of their goods.
