Well, I may have to eat my words. Further research shows the measurements of carbs and fiber vary widely depending on the producer. Most websites agree, though, that the net carb count is definitly less than 10g per serving. So, it looks like coconut flour IS a good low-carb option.

Also, I got these options off of the Bob's Red Mill site:

Fava Bean Flour: net carbs 11g: sugar 1g: protein 9g

Flaxseed Flour: net carbs 0g: sugar 0g: protein 6g

Garbonzo Bean Flour: net carbs 13g: sugar 3g: protein 6g

White Bean Flour: net carbs 12g: sugar 2g: protein 7g

(Coconut Flour: net carbs 4g: sugar 0g: protein 2g)

If anyone has had experience cooking with these flours, please send me your experiences, good and bad, and any tips I may need to know (i.e. adding equivalent amounts of liquid when using coconut flour). Thanks.
