Betsy Hagman's book has a great recipe for banana bread--" Best Banana Bread".
 I've changed it a bit:
 
MIX ALL DRY INGREDIENTS TOGETHER IN ONE BOWL:
1/4 cup soy flour
1/2 cup tapoica (starch) flour
1 cup rice flour
3/4 tsp baking soda
1-1/4 tsp cream of tartar
1/2 tsp salt
2/3 cup sugar
1 tsp xanthan gum
1/2 cup chopped nuts (optional)
 
MIX ALL WET INGREDIENTS TOGETHER IN ANOTHER BOWL:
1/3 cup oil (I've used sunflower oil)
2 eggs, well beaten, or equivalent Egg Beaters
1/2 cup coarsly mashed bananas
 
In another bowl, add dry ingredients alternatively with wet ones, a small
amount each time, beating after each addition until smooth.
 
Pour into well-greased 8" by 4" loaf pan (I use gf PAM to grease it)
Bake just under one hour until browned in preheated 350 oven.
 
NOTE:  I've altered the proportion of the flours--just play with it for
different taste sensations!
