note to them asking why gluten is not required to be listed on food and
drug labels. I just did. <snip>

That e-mail message to the FDA is a nicety, but I, skeptic that I am,
don't think any real action will be taken unless formal, legal, official
and specific action is taken.

If you read through the FDA archives, and thier legal updates, it is a
kind of a *bumbling bureaucracy*. Oftentimes formal petitions and legal
actions go through, by default, because the FDA failed to meet it's own
timelines, and deadlines to respond.

How many years did it take just to make uniform the Nutritional Facts
label (US). Food manufacturers fought hard to avoid having to disclose
in the required font <type> size just how much fat, carbohydrate &
cholesterol consumers were getting. What they did do though, was
"adjust" the serving size, to tweak the numbers.

Want an example? Buy a little bag of Fritos from a vending machine......
serving size ? 3 servings in this little package. You can triple all
those numbers for fat and calories, unless this little bag will in fact
be 3 servings. <not likely>.

Still this was years in the making, and pulled from the fire more than
once.

IF the National Groups would agree on the basics, <what grains are safe,
which ones are not> getting better labeling would be something they
could take the leadership role with, and begin the process. Still , I
would not hold my breath!
