This is a comment.  Previously I had been using flours from the oriental
store until I found out I was getting contaminated as wheat flours were
piled side by side with the gf flours.  I switched back to Dietary
specialties flours and notice such a difference in my baked goods, I found
it to be far superior to the flour in the oriental store.   My cakes etc.
rise better and have a much better texture.  Also I used to order from
Dietary specialties and never had a problem, the only reason I switched was
because oriental flours were a little cheaper.  For the small difference no
way will I change again.
