For the benefit of our new subscribers, here is some background information on
breadmachines.

Not all machines work with our alternate flours. The terms 1 1/2 or 2 pounds
are not accurate with our flours. These machines generally need 3 cups of
flour to make a large loaf.

There is a collection of tested breadmachines recipes and tips available
from this List. It is available by sending to: [log in to unmask]

Since this is your first experience with a breadmachine, you would not be able
to use one of our trick of starting with only 1/2 of the water. Then add more
and look for the desired texture in the dough. Often, a reduction of 1 to 2
tablespoons of water is a good starting place for testing new bread recipes.

If you have a local support group, there should be a local celiac that can walk
you though the process based upon local conditions. Regardless, I would
recommend that you call Red Star Yeast (800 4-CELIAC). They have considerable
experience with our flours and many breadmachines.
