Hi everyone,
this is a brief on the answers I got to my question: "is wheat starch
tollerated in GF diets?"

From USA, Canada:
It's definitely forbidden. Some assert it might make a coeliac very
sick. I've also been told that even white vinegar  is to be avoided.

AUSTRALIA:
forbidden. They've lowered the gluten tollerance in GF-diet from very
low to zero!

In Switzerland:
Some accept it, some not. Well treated wheat starch shouldn't contain
gluten.

From Sweden:
From personal experience I know that the most used bread & cake mix used
by celiacs in Sweden is composed of ONLY wheat starch (this mix is
specially produced for GF-diets). It's the one I use for my 6-yr old
daughter, and all check-ups show she's on a glutenfree diet.
