Hi Listmates!

Quick question regarding my first year baking GF Holiday cookies.  My
daughter would like to try Gingerbread, and I am looking at the Betty
Crocker cookbook which calls for 7 C FLOUR.  Of course I will substitute my
Bette Hagman 4 flour blend, but my questions are:

1)  Do I need to add xantham gum for flat gingerbread cookies ?

2) Recipe states if using self rising flour, omit baking soda and salt.  So
do I omit those as well ?

Normally I wouldn't mind experimenting, but I know there's a LOT of
knowledge and experience out there !
