Thanks to all who replied.  I have not had time to check these out ...

CHEBE-TYPE CRUST
2 c. tapioca starch flour
1 c. parmesan cheese
2 eggs
2 T oil
1/3 c. water
1/4 c. dry milk
1 tsp baking powder (opt.: less dense, chewy texture)

Add any spices like oregano, etc. Blend or sift dry ingredients. Mix wet
ingredients & combine with the dry. It should have the consistency of play
dough. Set oven on high (400 degrees?). Roll or pat out dough to size
desired on pizza pan. Blind bake (opt.).  Brush crust w/olive oil to
prevent sauce from soaking into dough.  Add toppings & bake until edges are
brown & toppings are hot.


PIE CRUST FOR PIZZA
1 cup sweet rice flour
1/3 cup white jasmine flour (home-ground)
1/3 c. shortening, (lard preferred)

Pat out onto pan

PIZZA CRUST
Makes 2-12" round pizza or several smaller ones, as desired…

2 c. oriental white rice flour, (not sweet rice) or a mix of your choice
2 tsp. xanthan gum
1 tsp. sugar
1 / 2-1 tsp. Salt.
1 pkg. Red Star Instant Yeast
2 Tbs. vegetable or olive oil
Water

Mix dry ingredients. Add oil & enough water to make a gloppy dough. Spoon
onto a 'pam-ed' baking pans in sizes desired. Wet hand &  smooth dough
w/palm to shape into a circle about ¼ inch thick. (Rewet hand as necessary!
Excess water will bake away.) Prebake crusts at 425 until set but not
browned, 10-15 minutes.

Top pre-baked crusts as desired (or freeze to top later)…Contadina pizza
sauce, cheese, Hormel regular or turkey pepperoni, mushrooms, etc.  Return
to oven until done. For crisp crust, bake on clean pizza screen or oven
rack.


YEAST-FREE PIZZA CRUST McSHANE
1 / 2 c. cornstarch
1 / 2 c. rice flour
2 / 3 c. milk or milk sub
2 eggs
1 tsp. salt
1 Tbs. Italian spices
Dash of garlic powder or salt

Mix gently, do not over-beat. Pour batter into greased pizza pan. Bake at
425º for 20 minutes. For crispier crust, brush top w/ oil & bake 5 minutes
more. Add sauce & bake or freeze for future use. (Opt…Cook on top of stove
in a small fry pan like crepes. Use medium-low heat, cook until set, do not
brown. Use a 6" pan for kid size.)
