Hi All,

I posted a recipe over the weekend for thin mint cookies. Thanks to a
few responses that people sent, I was able to simplify the recipe even
more. I made them today and my 10 y.o. Celiac son gave them a 9 out of
ten rating. They are so simple, they look and taste like thin mints.
Just a little messy.

Start with any GF cracker. As close to a ritz as possible. I used Bi
Aglut Snack crackers (that are round and scalloped so they looked like
real thin mints.) I also used Glutano Crackers that are rectangular
(they didn't look quite as pretty but tasted the same. Melt Hershey's
mint chocolate chips (I called the company to verify GF) in a double
boiler or in microwave. Then dip the crackers and cool on foil or wax
paper in the fridge.
